TRUFFLE KERFUFFLE 2023


After the disruptions of Covid, Truffle Kerfuffle is back! With crisp winter air filled with the heady aroma of fresh truffle, TRUFFLE KERFUFFLE returns 23rd to 25th June2023 at Fonty’s Pool, Manjimup and promises to take you on a journey of rediscovering the beautiful region of the Southern Forests, from the ground up.


Indulge in a weekend long celebration of truffles in the heart of Australian truffle country, Manjimup. Join truffle hunters and their clever canines as they nose out prized black-gold, tuber melanosporum, and experience the thrill of unearthing fresh truffles.


Visit the Marketplace for a taste of the region and indulge in truffle laden dishes to satiate your truffle desires. Meet the local producers selling their just-harvested produce and hand-crafted artisan goods. Take a seat at a decadent long-table feast at one of the special multi-course dining events where your senses will succumb to the headiness of freshly shaved truffle and the famed local produce. Gather around the bench for intimate cooking sessions in the Chef’s Cabin where you’ll learn techniques and new recipes, as well as sampling delicious dishes that you can recreate at home.  Watch free cooking demonstrations with renowned chefs and enjoy the entertainment on the festival grounds.


A true country festival with a down-to-earth atmosphere, Truffle Kerfuffle is where you can meet the farmers, producers, winemakers and locals that make up the Southern Forests and Valleys community.


From its initial beginnings in 2011, Truffle Kerfuffle (a not-for-profit community event) has grown into a highlight of the Australian tourism calendar.




FONTY’S POOL


Truffle Kerfuffle takes place at Fonty’s Pool amidst the vibrant horticultural neighborhood of Seven Day Road. The pool is the legacy of Italian Archimedes Fontanini MBE who landed in Fremantle in 1904 with just 12s.6p ($1.25) in his pocket. His family founded a farm at a time when the trip to Bridgetown for supplies took three days by horse and cart. What began as a stream fed dam for his children to swim in, became so popular locally that he rebuilt it and opened to the public in 1925. Nearly an acre in size, the pool has a winter flow rate of 44,000 litres per hour. Fonty’s Pool is now owned and managed by Jeremy and Kelly Beissel and their young family, who with assistance of National Trust of Australia and encouragement of the Fontanini family, restored it to it’s former glory.

A Breaking Bread Winter's Feast – Friday, 23 June 2023 7:00pm

A breaking-bread slathered in truffle butter, welcome return to the Truffle Kerfuffle Table with a shared feast of truffle-laden, Southern Forests’ produce driven dishes. Crafted by the creative partnership of Tasmania-based, ‘Wild Things’ Chef Analiese Gregory and WA produce-centric Chef Melissa Palinkas of Young George and Ethos, this warming feast opens our From the Ground Up weekend of truffle-feasting and all things Southern Forests.


Truffle & Native Forager's Brunch – Saturday, 24 June 2023 10:00am

A native produce and truffle focused brunch from unearthed ingredients grown and gathered in the Southern Forests prepared by Yoda in his inimitable Fervor style. A very special dining experience that tells a unique food story with cultivated and foraged ingredients.


Truffle Nose to Tail Dinner – Saturday, 24 June 2023 7:00pm

A multi-course dinner centered around Colin Fassnidge’s creative yet refined take on the nose-to-tail food philosophy, the mysterious black truffle and the diversity of Southern Forests produce. The menu will be a tribute to local truffle harvested minutes from Fonty’s Pool. Experience black truffle at its freshest at the hands of a no holds barred chef with every course complete with a splendid Southern Forests wine pairing


From the Forest Floor Brunch – Sunday, 25 June 2023 10:00am

The cultivated forest floor of a trufferie is a place of mystery where dark, fertile earth nurtures the umami-rich flavours and aromas of the black truffle. Led by the highly-talented Chef Jake Kellie, this multi-course brunch explores its depth of flavour and other Southern Forests’ grown and ranged produce matches.

Hosted by Australian Gourmet Traveller's, Max Veenhuyzen, the Chef's Cabin Series is a unique chance to gather around the kitchen bench with world class culinary talent (wine glass in hand), pick up some new tips, a chat with our hosts and a delicious, truffle-laden, tasting portion of each dish. 

The Chef’s Cabin Series are limited to 40 guests each so book your tickets quick. 


Chef's Cabin with Jake Kellie – Saturday, 24 June 2023 10:00am

As the co-owner and Executive Chef of Arkhé (are-kay), Adelaide’s first open-flame restaurant, Michelin-starred chef Jake Kellie knows how to bring the heat and to deliver an experience that goes beyond the palate. His extensive resume includes time with culinary rock stars such as Heston Blumenthal (The Fat Duck, United Kingdom) Brett Graham (The Ledbury, Notting Hill), Scott Pickett (Estelle, Melbourne) and Matt Moran (Aria, Sydney). Hosted by great friend, Australian Gourmet Traveller's, Max Veenhuyzen, experience Jake’s world-class culinary talent through his umami-rich dishes and demo. 


Chef's Cabin with Melissa Palinkas – Saturday, 24 June 2023 12:45am

The food produced by Young George and Ethos’ executive chef and co-owner Melissa Palinkas has been lavished with praise by food reviewers who describe her food with words like ‘inventive, fun, smart, original and drop-dead gorgeous’. Her ‘nose to tail’ or ‘root to shoot’ approach to cooking with West Australian produce means that nothing is wasted. The trimmings of vegetables and meats are used in stock and leftover vegetables are fermented or used for preserves. Join Meliss for her rich, economy of taste, winter-in-the-Southern Forests experience. 


Chef's Cabin with Analiese Gregory – Saturday, 24 June 2023 3:30pm

Be curious about nature & slow food with Tassie-based Analiese Gregory. Spending a few years of her childhood traveling remote areas of Australia with her parents, Analiese took up cooking at the age of 15. Her extensive CV starts with her time at Logan Brown in Wellington before traipsing across the world to work in Europe’s most prestigious kitchens, including time at 2 Michelin Star venues. Back in Sydney, Analiese then spent 5 years alongside Peter Gilmore, heading the team at Quay. Countryside beckoned over big city and having already established strong ties with Tasmania after numerous weekend visits to both friends and producers. This now sees Analiese diving for urchin on her way to work, establishing personal relationships with her growers, and preparing produce driven menus and recipes. 


Chef's Cabin with Paul 'Yoda' Iskov – Sunday, 25 June 2023 10:00am

Paul Iskov established Fervor with the aim of providing a “culinary experience you can’t get anywhere else”. Fervor harness locally sourced native produce and share it with diners at unique locations across WA, including salt lakes, beautiful bush land and pristine beaches. Paul boasts an outstanding resume, including experience in highly acclaimed kitchens around the world, including Vue De Monde, Amuse, D.O.M, COI, Pujol and Noma. He has a great love and respect for the land and endeavors to portray this through his food, locations, dedication and passion. 


Chef's Cabin with Colin Fassnidge – Sunday, 25 June 2023 12:45am

Be charmed by the charismatic and uber-talented Colin Fassnidge, who counts pork, potato, lemon and peas among his favourite ingredients to cook with, says he was drawn to cooking as a career at the age of 12 after seeing esteemed French chef Raymond Blanc on a television program. The father of two began his career at London’s Le Manoir aux Quat'Saisons in 1994 where he completed his apprenticeship under his idol, Raymond Blanc. Colin was Executive Chef of two-hatted restaurant, The Four in Hand Dining Room from October 2005 to January 2016, as well as hatted restaurant 4Fourteen, from 2011 to 2018 Crowned GQ Magazine’s Chef of the Year in 2013.

These sleep up to 6 people and include a double bed in the bedroom and two sets of bunks in the open kitchen/living area. All bedding included. Fonty's Pool two-bedroom chalets feature an open-plan lounge/dining area and fully equipped kitchen. They sleep 6 and include a queen bed in the master bedroom and a Susie Bunk [Double bed with a single bunk above it and pull-out trundle] in the second bedroom. There is a bathroom with a separate toilet, air conditioning, TV, a small veranda with pool views and parking next to the chalet for one vehicle. All bedding and bath towels are included. Bond payable on arrival. Check-in from Friday 23rd June 3:00pm. Check-out Monday 26th June 9:30am.

Fonty's Pool THE LODGE + Truffle Nose to Tail Dinner - 6 People

Fonty's Pool The Lodge is a 3 bedroom house over-looking the pool, it features an open-plan lounge/dining area and fully equipped kitchen. This sleeps up to 10 guests and includes two queen beds, two single beds and two sets of bunks in the sleepout. There is a bathroom with a separate toilet, air conditioning, TV, dishwasher, oven, a veranda and parking next to the lodge for a maximum of 2 vehicles. All bedding and towels are included. Bond payable on arrival. Check-in from Friday 23rd June 3:00pm. Check-out Monday 26th June 9:30am


Additional guests (max of 10 within The Lodge) will be required to purchase Festival Village passes separately. Only 6x Festival Village passes and 6x Saturday dinner tickets included in the package.

Space will be allocated according to details provided of caravan/motorhome/tent type or camper trailer. Specific camp sites can’t be reserved in advance. Fonty’s Pool management will allocate campsites.  

Solar power permitted but no generators allowed. 


No animals permitted on festival weekend.


Max occupancy 4 Adults or 2 Adults + 3 Children – additional guests must be added to your transaction. Bookings exceeding this will be declined.
